Born from the Grove

Seven Olive began not in a kitchen, but in a quiet grove.

Tucked within the grounds of Renaissance Esmeralda Resort & Spa, rows of olive trees were planted as a tribute to California's agricultural heritage and to something older and simpler: the pleasure of growing, harvesting, and sharing with others. Over time, the grove took root in the Coachella Valley's particular landscape, shaped by relentless sun, cool desert nights, and the unhurried rhythm of seasons that move differently here than anywhere else.

When the trees produced their first harvest, the yield was modest: just seven gallons of golden olive oil. It wasn't a commercial venture or a grand culinary plan. Simply a small expression of the land itself.

Seven Olive was born from that discovery.

Named for those first seven gallons, the restaurant is rooted in California's seasonal abundance and shaped by the Coachella Valley's own pantry of ingredients: Medjool dates, fresh citrus, desert herbs, coastal seafood, and produce from the farms that ring this valley. The menu changes. The spirit doesn't.

What began with seven gallons of olive oil now fills every dish, every glass, and every evening worth remembering.
